Greatest Apple Crisp Ever

The result of combining every Apple Crisp recipe I've ever read and totally rockin' it. 

2-2 1/2 pounds baking apples--peeled, cored and thinly sliced (I used Fujis)
1/2 cup white sugar
1 tablespoon flour
1 teaspoon pumpkin pie spice
2 tablespoons lemon juice
1/4 cup water

In a large bowl, whisk together everything but the apples. Once mixed, toss the apples with sauce. Cover and refrigerate for at least an hour, stirring occasionally. When you're ready to bake it, preheat the oven to 350 degrees. Spread the apples evenly into a greased 9x11 baking dish. 

Make your topping:
1 1/2 cups flour
1 cup packed brown sugar
2 cups oats (either quick-cooking or rolled oats will work)
1 cup butter, softened

Use your hands to mix the topping and then crumble it evenly on top of the apples. 

Bake until the apples are bubbling and the topping is golden brown. 

Most important step here: Serve with a scoop of vanilla ice cream and drizzle warm caramel sauce on top of each dish. 

So very, very delicious. I'm thinking this same recipe would work well to create the Greatest Pear Crisp Ever, as well. If you aren't working around a Raisin Hater, you can toss in some raisins or dried cranberries to up the already extremely high levels of yumminess.
